Roasted chicken breast with rice

Roasted chicken breast with rice, why not? This dish is simple but sooo delicious. I prepare it when I'm too lazy to sit all the time in the kitchen. All you have to do is bake the chicken and cook the rice while in meantime you can work on your computer or do whatever you want. When everything is ready, fry your favourite vegetables with rice and that's it. All ready to eat!

Roasted chicken breast with rice

Ingredients:


Chicken:

Chicken

2 breasts

Paprika powder

1/2 tsp

Garlic

1 small

Soy sauce

5 tbsp

Sesame oil

5 tbsp

Juice of 1/2 lime

Salt, Pepper, Sugar

Rice with vegetables:

Long grain rice

2 sachets

Carrots

2 small

Leek

1/2

Paprika

1

Vegetable oil

Sesame oil

2 tbsp

Teriyaki sauce

5 tbsp

Soy sauce

5 tbsp

Salt

Garnish:

Sesame

Chives

Instruction:


Step 1

Wash the chicken breasts and remove any membranes and any cubes. Then cut them lengthwise into two parts and put them in an ovenproof dish. Pour in the oil, lime juice, soy sauce and the rest of the spices. Mix everything together and place in the fridge until the oven is preheated.


Step 2

Preheat the oven to 190°C (top-bottom), and in the meantime, cook the rice according to the instructions on the package. When the rice is ready, transfer it to a plate and set aside to cool.


Step 3

Put the dish with the chicken into the preheated oven and bake under aluminum foil for about 25 minutes. Remember to turn the meat twice during the process.


Step 4

Heat the vegetable oil in a frying pan, add the vegetables and fry under cover until soft (stirring from time to time). Pour in the teriyaki sauce and then add the cooked rice. Mix everything together and add soy sauce along with sesame oil. Fry the whole thing for a while.


Step 5

After roasting, we take the meat out to the board and after a while we cut it into strips.


Step 6

Put rice with vegetables on a plate and place pieces of chicken on it. Cover everything with the sauce obtained from roasting the chicken. Garnish with roasted sesame and chives.

Note! If the dish seems too dry to you, you can prepare the sauce: combine the teriyaki sauce with the heat-resistant baking juice remaining in the dish and heat the whole thing in a pot for about 2 minutes.
